Prep Time 1 hour hr 20 minutes mins

Cook Time 40 minutes mins

Total Time 2 hours hrs

Course Side Dish

Servings 12 -18

Ingredients

  • 4 cups mashed sweet potatoes (see directions)
  • 1 + 1/2 cup granulated sugar
  • 1/2 teaspoon + 1/8 teaspoon salt
  • 1 1/2 teaspoons pure vanilla extract
  • 2 eggs , beaten
  • 1/2 cup (1 stick) + 2 tablespoons unsalted butter, melted
  • few dashes of cinnamon

For the Topping

  • 2 cups brown sugar , packed
  • 2/3 cup all purpose flour
  • 2 cups pecans pieces
  • 2/3 cup butter, melted

Instructions

  • Preheat oven to 375 degrees F.

  • Wash potatoes, prick each potato with a fork, all over. Rinse and pat dry. Line a dish with foil. Arrange the potatoes in a 9 x 13 baking dish.

  • Bake potatoes for 80-110 minutes, flipping potatoes once while baking. Insert a knife into the center of the potato to check for doneness. If they are a little tough, let them back longer. Larger potatoes may take longer (110 mins) while smaller potatoes may only need 80 minutes.

  • Allow to cool for 10 minutes. Use a knife to cut into the potato. Scoop out the insides and place in medium bowl. Mash potatoes with potato masher or mixer. This will make them easier to measure and whip later.

  • Preheat oven to 350 F degrees.Measure out 4 cups sweet potatoes and place in large mixing bowl. Add 1+1/2 cup granulated sugar, 1/2 teaspoon salt + a dash of salt and 1 + 1/2 teaspoons vanilla extract. Turn mixer on speed 6-8 and whip while getting eggs beaten. Add beaten eggs, melted butter and cinnamon to bowl. Continue to mix on speed 6-8 for 2 minutes.

  • Use a baking dish (I used 9 x 11) but have also used both bigger and smaller. Prepare it with nonstick cooking spray or butter. Evenly spread batter into dish.

  • Bake for 30-35 minutes at 350 degrees F.

  • Meanwhile, prepare the topping.

  • In a medium bowl, combine sugar, flour, pecan pieces and melted butter. Stir to combine well.

  • Once the potatoes are done baking, spread mixture evenly over the top. Return to oven and bake for 10 minutes.

  • Allow dish to set for 30 minutes before serving.

This was amazing! I made this for Thanksgiving, and it was absolutely delicious. The pecans are a must to help offset the sweetness. My kids raved about it. My only regret was that we had to downsize our Thanksgiving 2020, so this didn’t get shared with the large group we usually host. I will definitely be using this recipe for years to come!! (However, I will be cutting down the sugar that goes in the sweet potatoes themselves– the sugar is a little overpowering 🙂

  6. I much prefer this to the marshmallow topping. You can control the sweetness. Super sweet sweet potatoes don’t need much. Thanks for sharing this alternative to the gooey, sickly sweet casseroles.

FAQs

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

Why put eggs in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

Give them a cold water bath: Once your fries are chopped, toss them into a large bowl. Then cover the fries completely with cold water and let them soak for at least 30 minutes (or up to overnight). This will help to rinse off the excess starch and help the potatoes crisp up beautifully in the oven.

Is it better to peel sweet potatoes before or after boiling? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Why is my sweet potato casserole so watery? ›

Why is my sweet potato casserole watery? If you overcook your sweet potatoes, they may begin to absorb too much liquid, making them watery. It's important to cut your potatoes into equal-sized pieces so that they all cook at the same rate. Make sure to remove them from the steamer as soon as they are fork-tender!

Why do Americans put marshmallows on sweet potato casserole? ›

Most people point to a 1917 pamphlet by the Angelus Marshmallow Company as the first time sweet potatoes and marshmallows came together. This company is believed to be the first to commercially-produce and sell the squishy white marshmallows we know, roast, and snack on today.

Why is my sweet potato casserole stringy? ›

Sweet potatoes stored at temperatures above 60 degrees Fahrenheit will shrivel and become dry and stringy. Sweet potatoes may develop an off-flavor and the flesh may become discolored when stored at temperatures below 55 degrees Fahrenheit.

How do you tell when sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

The best way to prevent it from drying out is to add a little bit of water, around ¼ cup, to the top of it. Allow the water to seep between the food and the sides of the baking dish. Cover with aluminum foil to seal in the moisture.

Why is boiling not good for sweet potatoes? ›

Bake, don't boil

Baking sweet potatoes caramelizes their natural sugars, especially when done whole. It intensifies their flavor and creates a richer taste compared to boiling, which can result in a watered-down, bland flavor.

How to bake sweet potato in oven Martha Stewart? ›

Pierce potatoes all over with the tines of a fork and bake in oven, directly on rack, until soft and caramelizing, 1 1/2 hours. Slash the tops of potatoes open with the tip of a sharp knife and push ends of each potato toward each other to open. Divide butter, salt, and pepper among potatoes and serve.

Is it better to bake sweet potatoes in foil or not? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired. Unwrapping the sweet potatoes and increasing the oven temperature produces charred, roasted flavors and caramelizes converted sugars.

Should sweet potatoes be soaked before cooking? ›

If you skip the soaking stage, they don't get as crisp. I rinse them off, cut off the ends, jab them with a knifepoint, and bake them until fork-tender, usually 30–40 minutes at 400 F. No problem. Works for regular and all the varieties of sweet potatoes/yams that I have tried.

Why do chefs soak potatoes? ›

The reason is to prevent the potatoes exposure to air, which causes dehydration, oxidation, and discoloration. Immersing cut potatoes will also help rinse off excess starch.

Why are my sweet potatoes still hard after baking? ›

The Squeze Test - When you are wondering if your baked sweet potato recipe is done, give the sweet potato a little squeeze (with an oven mitt on!). If your baked sweet potato feels tender, it is likely ready. If it still feels firm, I'd put it back in the oven for another 15 minutes.

How do you soak sweet potatoes to remove starch? ›

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
