Yes, it doesn't have egg but it has the vegan egg whiteor aquafaba. Chickpea can water or brine marvelously transforms to something similar as fancy egg whites whipped until stiff peaks are formed. I am yet to try aquafaba for making meringues and in dessert baking, but I am a fan already.

Use your electric mixer or stand mixer to whip the chickpea can water for making your aquafaba. Beat for almost ten minutes to get the stiff peaks. The water will first be foamy, then white and eventually it will start to turn soft, airy and stiffer. Once you start to see the peaks, stop it right there.

The vegan cloud breads are not pillowy soft or dense. These have however a softer insidetexture with a slightly crumbly outer texture. If the cloud breads are under-cooked, you will find a denser texture. So, use a toothpick to check if these are cooked in the center. The breads have an airy body because of the magic liquid of aquafaba. However, cooking these breads for longer will make them hard and crispy(I still love them as chips or crisps). So stop as soon as you see them browning around the edges.

The recipe doesn't use any bread or all-purpose flour. Instead, I used almond flour, just a cup of flour with two cups of beaten aquafaba and ⅓ cup of almond milk seasoned with jalapeños, spices and dry herbs. Hence, gluten-free+vegan!

What I liked about the vegan cloud bread is that they taste great in both savory and sweet version and can be beautifully used as an alternative to burger buns. It's really heavy, I don't know why. What I loved about the vegan cloud bread is these are super easy to make. And what I loved the most about vegan cloud bread is they are low-carb.

Few Facts About Vegan Cloud Bread:

  • Its vegan.
  • It’s low in calorie.
  • It tastes great.
  • It’s airy, but not soft.
  • It has a slight crumbly outer texture.
  • It slices.
  • Tastes great as a toast or as burger buns.

Now the Recipe of Vegan Cloud Bread:

Before we start with the vegan cloud bread recipe, let’s discuss about aquafaba a bit. After all, it’s one of the most important elements in this dish.

That’s why you should get it right.

How to Whip Aquafaba?

  • Drain the liquid from a chickpea can and pour the liquid in a mixing bowl.

  • Whip at medium speed with your hand or stand mixture.
Vegan Cloud Bread Recipe (5)
  • First the liquid will turn foamy, then it will become cloudy.
  • Whip until soft peaks are formed.(this works too for this recipe)

  • Beat for a few more minutes until the peaks are stiff.(this works even better for this bread)

NOTE: Use a cup of whipped aquafaba first and then fold in another cup. The consistency of the batter should feel airy and foamy, not liquidy. Add a few extra spoons of almond flour if required.

Stpe-4:

  • By using a spoon or scoop, add a spoon-full of mixture onto a greased baking sheet.(okay, I know that over-greased my baking sheet.)
Vegan Cloud Bread Recipe (13)
  • Bake in a preheated oven (at350F) until the edges turn brown.(exactly 10 minutes in my oven)
  • Now turn off the oven and let it stand in the oven for five more minutes.
  • Take the cloud breads out and allow them to cool down on a cooling rack.(cooked breads will show cracks on them)
Vegan Cloud Bread Recipe (14)
  • Serve immediately or store in a sealed bag in refrigerator.
  • Don’t forget to reheat in the microwave before serving.

Making a Loaf:

  • If making a vegan cloud bread loaf, add 2 teaspoon of extra almond flour or chickpea flour.(I cooked with the same batter used for vegan cloud breads, and didn't quite liked the texture. Adding some extra almond flour helped to achieve the texture I wanted)
Vegan Cloud Bread Recipe (15)
  • Cook for twenty minutes. (Loaf took more minutes to cook thoroughly)
Vegan Cloud Bread Recipe (16)
  • Allow it to cool down completely.
  • Then slice and serve.

NOTE: I sliced the warm loaf and it sank in the middle.

  • Thus, wait till the loaf cools down completely.
  • Insert a toothpick to see if it is cooked in the center.
  • The baking time may totally go up or down depending on the type of oven you have. So, keep checking your bread while in the oven.

FAQs

Why isn't my cloud bread getting fluffy? ›

If your cloud bread comes out runny or flat, it's because either the egg whites weren't stiff enough or you mixed too long and flattened the egg whites. The fluffy texture is all because of the egg whites. The most common issue people run into making cloud bread with Greek yogurt is that they're flat.

What is cloud bread made of? ›

It's made using just a few simple ingredients—eggs, cream cheese, and cream of tartar—but when mixed up in just the right way and baked in a low heat oven, you get pillowy, bread-like rounds that are gluten-free and keto-friendly.

Why did my cloud bread flatten? ›

If the whites don't get “stiff” enough, your cloud bread will spread and be flat. The peaks are stiff when they “stand up” when you hold the beaters up (see my picture above). They also should not move or slide out if you tilt or invert the bowl. Traces of fat will prevent your whites from whipping.

What do you do if your cloud bread is liquidy? ›

You just need a tiny bit of cornstarch in your cloud bread, to help soak up any extra liquid in your meringue. Cornstarch also helps make your meringue shiny.

What is the trick to fluffy bread? ›

Lubricate With Oil. One of the easiest ways our bakers follow to make bread soft and fluffy is by using 1-2 tablespoons of lubricant/fats such as vegetable oil to wet the ingredients.

What flour do you use for cloud dough? ›

If you don't have scented conditioner you can also add in a few drops of essential oils. Instead of cornstarch, you can use regular all-purpose flour as well.

How to make cloud dough ingredients? ›

This easy no-cook dough requires just 2 ingredients: cornstarch and hair conditioner. Easy enough! Mix equal parts together in a bowl. There is no cooking required and students can get their hands messy while helping to make it.

Does flour work for cloud dough? ›

Cloud dough can be made in any quantity, but this recipe will make enough for one child. Add 3 cups of flour to a bowl. Slowly add in 1 tablespoon of baby oil and incorporate with your fingers. Continue to add baby oil one tablespoon at a time until the dough is moldable.

Why does cloud bread taste bad? ›

Sadly, the awful taste will bring you right back down to Earth. Sweet cloud bread is meringue. It's not like meringue, it is meringue, rebranded. Both recipes call for whipped egg whites with sugar, and sometimes a stabilizer, like an acid or a starch.

Does cloud dough go bad? ›

Store the cloud dough for future play in an airtight container. Really, this stuff doesn't go bad. You know you'll need to toss it when it gets impossible debris in it.

Does Aldi have cloud bread? ›

You have to be relatively familiar with the kitchen, as it requires baking with separated egg yolks and whites, cream cheese, and other ingredients. Luckily for those without the skills (or the time!) to bake cloud bread every time you want a sandwich, Aldi has its own version that comes pre-made!

What does cloud bread taste like? ›

Cloud bread tastes fluffy and doughy just like your favorite sourdough. All you need to bake it at home are eggs, cream of tartar, and cream cheese or Greek yogurt. (Although some recipes can mix in fresh or dried herbs too.) Here are nine ways to make it.

Can cloud dough dry out? ›

Does cloud dough dry out? Yes, yes it does! I store mine in ziplock bags when we're not playing with it, but it will dry out even in the bags. I found that it stays good for a few days and then it will start to get crumbly.

Why is my bread not fluffy and soft? ›

Over-kneading the dough can lead to a tight gluten structure and result in a dense texture. Using too much flour or not enough yeast can also affect the rise of the bread. Additionally, insufficient proofing time or improper shaping can contribute to a heavy loaf.

What is the fluffy texture of bread due to? ›

During baking of the dough, the ethanol evaporates while the carbon dioxide creates air pockets resulting in the fluffy texture of the bread.
